The human intestinal bacteria are able to anaerobically reduce the 1-amino-2-naphthol-based Sudan azo-dyes to aniline, 2,4-dimethylaniline, o-toluidine, and 4-nitroaniline that are potentially carcinogenic aromatic amines. The effect is more pronounced on Sudan I, Sudan II, and Para Red than on Sudan III and Sudan IV.
