2-Amino-3-methylimidazo[4,5-f]quinoline (IQ) is a mutagenic/carcinogenic compound formed from meat and fish during cooking. Intestinal bacteria (together with liver enzymes) contribute to its biotransformation. Some bacterial strains are able to produce 7-hydroxy-IQ from IQ, which is also direct mutagen. Examples of bacterial strains: Bacteroides thetaiotaomicron, Clostridium clostridiiforme, Clostridium perfringens, and Escherichia coli. |
